Ingredients
  

  • 2 cups cooked rice
  • 1 cup cooked chicken shredded
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1 egg beaten
  • 1 tablespoon vegetable oil
  • 1/2 cup peas
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic minced
  • 1 tablespoon chopped green onion

Instructions
 

  • In a large bowl, combine the cooked rice, shredded chicken, soy sauce, sesame oil, and salt. Toss to coat.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add the beaten egg and scramble until cooked. Remove from the skillet and set aside.
  • Add the garlic to the skillet and cook for 30 seconds, or until fragrant.
  • Add the peas, red bell pepper, and seasoned rice to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
  • Return the scrambled egg to the skillet and toss to combine.
  • Stir in the chopped green onion and serve immediately.
