- 2 cups cooked rice
- 1 cup cooked chicken shredded
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1 egg beaten
- 1 tablespoon vegetable oil
- 1/2 cup peas
- 1/4 cup chopped red bell pepper
- 2 cloves garlic minced
- 1 tablespoon chopped green onion
In a large bowl, combine the cooked rice, shredded chicken, soy sauce, sesame oil, and salt. Toss to coat.
Heat the vegetable oil in a large skillet over medium-high heat. Add the beaten egg and scramble until cooked. Remove from the skillet and set aside.
Add the garlic to the skillet and cook for 30 seconds, or until fragrant.
Add the peas, red bell pepper, and seasoned rice to the skillet. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
Return the scrambled egg to the skillet and toss to combine.
