  • 6 cups bread cubes day-old or slightly stale, from brioche, challah, or French bread
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 2 tablespoons melted butter
  • Maple syrup for serving
  • Powdered sugar for garnish, optional

  • Preheat the oven: Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  • Prepare the bread: Cut your bread into 1-inch cubes and place them in a large mixing bowl.
  • Make the custard: In a separate bowl, whisk together eggs, milk, cream, brown sugar, cinnamon, vanilla extract, and a pinch of salt until well combined.
  • Soak the bread: Pour the custard mixture over the bread cubes and gently stir to coat all the pieces evenly. Let the mixture sit for 10-15 minutes to allow the bread to absorb the custard.
  • Fill the muffin tin: Spoon the soaked bread mixture into the prepared muffin tin, filling each cup almost to the top. Drizzle melted butter over the muffins for added richness.
